- 2 cups dry whole wheat macaroni
- 1 pack of Cool&Simple Chili con Carne, thawed 24 hours in the refrigerator
- 4 large handfuls of fresh baby spinach or4–5 pieces of frozen spinach
- 2 cups shredded Tex-Mex cheese blend

Preparation
- Preheat oven to 400°F.
- Cook macaroni according to package instructions, drain, and set aside.
- In a saucepan, heat chili over medium-high heat until steaming.
- Add spinach and cook for 1 minute until wilted.
- Add cooked macaroni and mix well.
- Transfer to a baking dish, top with shredded cheese, and bake for 15–20 minutes until cheese is melted and golden.
- Serve with a green salad topped with cherry tomatoes and cucumbers.
