- Potato Gnocchi
- 2 Atlantic Salmon Fillets (skinless)
- 1 cup frozen spinach
- 1 cup cherry tomatoes
- 120g Boursin cheese
- Salt and pepper, to taste

Preparation
- Preheat your oven to 200 °C (400 °F).
- Cook the gnocchi in a large pot of salted boiling water according to the package instructions. Drain and set aside.
- Arrange the salmon fillets, cherry tomatoes and frozen spinach on a baking sheet. Season with salt and pepper.
- Bake for 12-15 minutes, or until the salmon is cooked through and the vegetables are tender.
- Remove the baking sheet from the oven, add the Boursin cheese and gently mix everything together to create a creamy sauce.
- Add the cooked gnocchi to the baking sheet and toss gently to coat everything in the sauce.
- Taste and adjust the seasoning with more salt and pepper, then serve immediately.
