  • Preparation

    1. In a small saucepan, combine the frozen blueberries and sugar. Cook over medium heat for about 8–10 minutes, until it forms a compote. Keep warm.
    2. In a bowl, whisk together the eggs, milk, maple syrup, and vanilla.
    3. Dip each slice of brioche into the egg mixture for a few seconds on each side.
    4. Melt the butter in a skillet over medium heat and cook the slices for 2–3 minutes per side, until golden brown.
    5. Serve the French toast topped with the blueberry compote. Add icing sugar and a spoonful of Greek yogurt or whipped cream, if desired.
    6. Serve immediately.
