- 8 slices of sliced braided brioche
- 2 cups frozen blueberries
- 3 eggs
- ¾ cup milk
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- 1 tbsp butter (for cooking)
- 1–2 tbsp sugar (for the compote, to taste)
- Icing sugar (optional)
- Greek yogurt or whipped cream (optional)

Preparation
- In a small saucepan, combine the frozen blueberries and sugar. Cook over medium heat for about 8–10 minutes, until it forms a compote. Keep warm.
- In a bowl, whisk together the eggs, milk, maple syrup, and vanilla.
- Dip each slice of brioche into the egg mixture for a few seconds on each side.
- Melt the butter in a skillet over medium heat and cook the slices for 2–3 minutes per side, until golden brown.
- Serve the French toast topped with the blueberry compote. Add icing sugar and a spoonful of Greek yogurt or whipped cream, if desired.
- Serve immediately.
