- Sliced braided brioche (e.g., Gabriel brand)
- 2 eggs
- ½ cup milk
- 1 tablespoon butter
- ½ cup light cream cheese
- ½ cup raspberries
- 1 tablespoon maple syrup

Preparation
- In a bowl or food processor, mix the cream cheese with the raspberries and maple syrup until well combined. Refrigerate.
- In another bowl, whisk together the eggs and milk. Set aside.
- Using a knife, remove the crusts from the brioche slices.
- With a rolling pin, flatten each slice of brioche.
- Spread the cream cheese mixture onto one slice of brioche and top with another slice to form a sandwich. Press firmly together with your hands. Repeat with the remaining slices.
- Melt the butter in a large skillet over medium-high heat.
- Carefully dip each sandwich into the egg mixture, coating both sides, then cook in the skillet for 2–3 minutes per side until golden brown. Repeat for each sandwich.
- Serve immediately and enjoy!
