    4. Bake Fries: Cook in the centre of the oven for 20 minutes, turning halfway through.
    5. Chop Fennel: Finely chop the fennel.
    6. Mix Shrimp Salad: In a bowl, combine thawed shrimp with fennel, capers, chives, lemon juice, olive oil, yogurt or mayonnaise, salt, pepper, and a dash of hot sauce if desired.
    7. Heat Sauce: Warm the poutine sauce over low heat for 5 minutes.
    8. Assemble: On a plate, place the crispy fries, add cheese, drizzle with hot poutine sauce, and top with the shrimp salad.
