    • 1 sheet Cool & Simple Puff Pastry, thawed
    • 2 zucchinis, thinly sliced
    • ¾ cup crumbled feta cheese
    • 2 tbsp olive oil
    • 1 tsp Italian seasoning or fresh thyme
    • Salt and pepper
    • 1 beaten egg (for egg wash)
    • A drizzle of honey (optional)

  • Preparation

    1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
    2. Unroll the puff pastry onto the prepared baking sheet.
    3. Arrange the zucchini slices in the centre of the pastry, leaving about a 2-inch border around the edges.
    4. Sprinkle the feta over the zucchini, then drizzle with olive oil. Season with herbs, salt and pepper.
    5. Fold the edges of the pastry inward to create a rustic tart. Brush the edges with beaten egg.
    6. Bake for 30 to 35 minutes, until the pastry is golden and the zucchini is tender.
    7. Drizzle lightly with honey before serving, if desired.
    8. Serve warm or at room temperature.
