Contrary to popular belief, this pastry creation originated in New Zealand, where a young chef, smitten with a Russian ballerina named Anna Pavlova, dreamed up a cake that’s crisp on the outside and soft on the inside. The meringue is as light as the dancer’s tutu. 
Our raspberry pavlova is made with artisanal meringue (50.7%), crisp on the outside and delicately soft at the center, topped with a mascarpone mousse (33.4%). It’s finished with a generous layer of high-quality frozen raspberries (15.9%), which add a refreshing tartness that contrasts perfectly with the sweetness of the meringue.

À éviter!

Ce dessert n’est pas à la hauteur de l’original, c’est une meringue sans aucune transition vers le moelleux (comme dans un macaron), donc dure, sèche et trop sucrée, avec un tout petit centre crémeux, sans aucune subtilité. Le dessert en donne plein la vue – c’est un leurre.
