Preparation:
- Sear the beef. Season the roast, brown it on all sides, then let it cool.

- Assemble. On plastic wrap, spread out the puff pastry, add the duxelles, the pâté, then the roast. Brush with mustard, seal, and refrigerate for 1 hour.
