    • 4 all-butter croissants
    • 1 package of smoked salmon slices
    • ½ cup crème fraîche or cream cheese
    • 1 tbsp fresh lemon juice
    • Zest of ½ lemon
    • 1 tbsp chopped fresh dill (or 1 tsp dried)
    • ½ red onion, thinly sliced
    • ¼ English cucumber, very thinly sliced
    • 1 handful of baby spinach
    • Salt and pepper, to taste
    • A few capers (optional)

  • Preparation

    1. In a bowl, mix the crème fraîche (or cream cheese) with lemon juice, lemon zest, dill, salt, and pepper.
    2. Meanwhile, prepare the lemon cream: mix the crème fraîche, lemon juice and zest, dill, salt, and pepper.
    3. Refrigerate.
    4. Thinly slice the red onion and cucumber.
    5. Once the croissants are baked and slightly cooled, slice them lengthwise.
    6. Spread the lemon cream on the bottom half of each croissant.
    7. Layer with baby spinach, smoked trout slices, cucumber, red onion, and capers (if using).
    8. Close the croissants and serve immediately.
