- 4 all-butter croissants
- 1 package of smoked salmon slices
- ½ cup crème fraîche or cream cheese
- 1 tbsp fresh lemon juice
- Zest of ½ lemon
- 1 tbsp chopped fresh dill (or 1 tsp dried)
- ½ red onion, thinly sliced
- ¼ English cucumber, very thinly sliced
- 1 handful of baby spinach
- Salt and pepper, to taste
- A few capers (optional)

Preparation
- In a bowl, mix the crème fraîche (or cream cheese) with lemon juice, lemon zest, dill, salt, and pepper.
- Meanwhile, prepare the lemon cream: mix the crème fraîche, lemon juice and zest, dill, salt, and pepper.
- Refrigerate.
- Thinly slice the red onion and cucumber.
- Once the croissants are baked and slightly cooled, slice them lengthwise.
- Spread the lemon cream on the bottom half of each croissant.
- Layer with baby spinach, smoked trout slices, cucumber, red onion, and capers (if using).
- Close the croissants and serve immediately.
