    Optional garnishes:

    • Capers
    • Chopped chives
    • Finely chopped shallot

  • Preparation

    1. Preheat the oven to 425°F (220°C) and place the rack in the middle position
    2. Using a rolling pin, roll out the puff pastry and cut it into 4 equal squares, approximately 6 inches each.
    3. With a knife, gently score a ½-inch border around each square to form a crust. Prick the centre of each square with a fork, avoiding the edges.
    4. In a small bowl, beat 1 egg. Brush the entire surface of each pastry square (including the crust) with the beaten egg.
    5. In another bowl, mix 1 tbsp of white sesame seeds, 1 tbsp of poppy seeds, and a pinch of fleur de sel. Sprinkle this mixture around the crust edges of the pastry squares.

FAQ – EVERYTHING YOU NEED TO KNOW BEFORE COOKING

How do you make a puff pastry egg bake with runny yolk?

To get a runny yolk, bake the puff pastry with your fillings first, then crack the egg on top halfway through. Return to the oven and bake until the white is set but the yolk stays soft—usually 6 to 8 minutes.

How to use frozen puff pastry?

Let it thaw in the fridge for a few hours or on the counter for 30–40 minutes. Unroll gently, dust lightly with flour, and avoid stretching. It’s great for savoury dishes like egg bakes, tarts, or wrapped salmon.

Do I need to thaw frozen puff pastry before baking?

Yes, thawing is important. Puff pastry needs to be pliable to unfold and shape properly. Baking it straight from frozen can cause it to crack or puff unevenly.

How do you make frozen puff pastry better?

Brush it with an egg wash for golden colour and extra crispness. Dock the dough with a fork to prevent it from over-puffing, and bake on parchment paper for even browning. A hot oven helps it rise properly.

What can I make ouf of puff pastry?

Puff pastry is perfect for both sweet and savoury dishes. You can make tarts, pinwheels, turnovers, or brunch recipes like smoked salmon and egg bakes. It’s a versatile shortcut for impressive meals.
