- 2 St-Gabriel milk buns
- 200 g (about 7 oz) cooked lobster meat (claws and tail preferred)
- 2 tbsp mayonnaise
- 1 tbsp finely chopped celery (optional)
- 1 tbsp chopped fresh chives or dill
- 1 tsp lemon juice
- Salt and pepper to taste
- Butter (for toasting the buns)
- Boston or iceberg lettuce leaves (optional, for extra freshness)

Preparation
- Make the filling:In a bowl, combine lobster meat, mayonnaise, celery, herbs, lemon juice, salt, and pepper. Taste and adjust seasoning as needed.
- Toast the buns:Gently open the milk buns without cutting them all the way through. Lightly butter the outsides and toast in a skillet or on a grill until golden and crisp.
- Assemble the rolls:Place a lettuce leaf in each bun (optional), then generously fill with the lobster mixture.
- Serve right away,with chips, a green salad, or dill pickles for a fresh summer meal!
