Veggie & Provolone Croissant


2 butter croissants Cool & Simple

• 1 tbsp light mayonnaise

• 1 tbsp basil pesto

• 4 slices of provolone

• 1 tomato, cut into thin slices

• 1 small cucumber, cut into thin slices

• ½ avocado, sliced

• 2 green lettuce leaves


• Bake croissants according to instructions on packaging.

• In a small bowl, mix the mayonnaise with the pesto.

• Cut croissants open.

• Spread the pesto mayonnaise inside the sandwich.

• Garnish the croissants with the provolone, lettuce, tomatoes, cucumber and avocado.

• Enjoy with a side of crudités, a green salad or a vegetable soup.
