Chicken Salad Croissant


2 butter croissants Cool & Simple

• ¼ cup light mayonnaise

• 1 tsp lemon juice

• ½ tsp honey

• 1 garlic clove, minced

• 1 cup cooked chicken, deboned and shredded

• ¼ cup red grapes, cut in two

• ¼ cup celery, chopped

• 1 scallion, chopped

• Salt and pepper, to taste


• Bake croissants according to instructions on packaging.

• In a big bowl, combine the mayonnaise, lemon juice, honey and garlic.

• Add the chicken, grapes, celery, scallion, salt and pepper to taste and mix well.

• Cut croissants open and split the chicken mixture between the sandwiches.

• Enjoy with crudités, a green salad or a vegetable soup.
