- 1 sheet of all-butter puff pastry
- 1 orange bell pepper, thinly sliced
- ¼ cup sun-dried tomatoes in oil, drained and sliced
- ¼ cup pitted Kalamata olives, halved
- 1 can of artichoke hearts, drained and quartered
- 2 green onions, thinly sliced
- 2 tablespoons basil pesto
- 165g fresh goat cheese, crumbled

Preparation
- Thaw the puff pastry in advance according to the package instructions.
- Preheat the oven to 400°F (200°C).
- Place the puff pastry on a baking sheet lined with parchment paper.
- Spread the pesto over the pastry, then top with the peppers, artichokes, tomatoes, olives, and goat cheese.
- Top with green onions
- Bake for 20–25 minutes or until the pastry is golden and crisp.
- Serve and enjoy!
