    • 1 sheet of all-butter puff pastry
    • 1 orange bell pepper, thinly sliced
    • ¼ cup sun-dried tomatoes in oil, drained and sliced
    • ¼ cup pitted Kalamata olives, halved
    • 1 can of artichoke hearts, drained and quartered
    • 2 green onions, thinly sliced
    • 2 tablespoons basil pesto
    • 165g fresh goat cheese, crumbled

  • Preparation

    1. Thaw the puff pastry in advance according to the package instructions.
    2. Preheat the oven to 400°F (200°C).
    3. Place the puff pastry on a baking sheet lined with parchment paper.
    4. Spread the pesto over the pastry, then top with the peppers, artichokes, tomatoes, olives, and goat cheese.
    5. Top with green onions
    6. Bake for 20–25 minutes or until the pastry is golden and crisp.
    7. Serve and enjoy!
