  • Ingredient List

    Soupe

    • 2 tablespoons fresh chives, chopped
    • Freshly ground black pepper, to taste

  • Preparation

    1. Preheat the oven to 400°F (200°C) and position the rack in the lower third.
    2. Unroll the puff pastry and fit it into a 23 cm (9-inch) tart pan.
    3. Meanwhile, thinly slice the tomatoes and place them on a clean towel or paper towel to absorb excess moisture. Cover with another towel or paper towel and let them drain for 10–15 minutes, replacing the towel if it becomes too wet.
    4. In a small bowl, mix the chopped herbs with the minced garlic.
    5. Spread the mustard evenly over the bottom of the puff pastry.
    6. Sprinkle a layer of grated cheese, then add a layer of tomato slices, and top with a portion of the herb mixture. Repeat the layers until all ingredients are used.
    7. Bake for approximately 20 minutes, or until the tomatoes are heated through and the cheese is slightly melted.
    8. Serve warm, accompanied by a green salad.

FAQ – EVERYTHING YOU NEED TO KNOW BEFORE COOKING

What pairs well with tomato tart?

Tomato tart goes well with fresh herbs like basil or thyme, a drizzle of olive oil, and cheeses like goat cheese or Gruyère. Serve it with a green salad, arugula, or a glass of white wine for a balanced meal.

How to make tomato tart not soggy?

To avoid soggy crust, drain sliced tomatoes and pat them dry. You can also sprinkle breadcrumbs or cheese on the base to absorb moisture. Pre-baking the crust helps keep it crisp.

What does tomato pie taste like?

Tomato pie tastes savoury and fresh, with a balance of acidity from the tomatoes and richness from the cheese or cream. It’s often herby, buttery, and slightly sweet depending on the tomato variety.

Does tomato pie have cheese?

Yes, most tomato pies include cheese like mozzarella, cheddar, parmesan, or goat cheese. It adds richness and balances the acidity of the tomatoes. Some recipes also use a creamy cheese base.

Should I peel tomatoes for tomato pie?

Peeling is optional. If you want a smoother texture, blanch and peel the tomatoes. If using firm, thin-skinned tomatoes like Roma, slicing them thinly and patting them dry is usually enough.
