  • Preparation

    1. Thaw the shortcrust pastry according to the package instructions.
    2. Preheat the oven to 400°F (200°C).
    3. Unroll the pastry, keeping it on its parchment paper.
    4. Using the cookie cutter, cut out shapes from the pastry.
    5. Gather the leftover pastry into a ball, roll it out with a rolling pin, and cut additional shapes.
    6. On half of the shapes, use a small knife to cut out a small circle or any design of your choice in the center.
    7. Place the cookies on a baking sheet.
    8. Lightly beat the egg and brush it over the cookies.
    9. Bake for 10–15 minutes, or until the cookies are golden brown.
    10. Remove from the oven and let them cool to room temperature.
    11. Spoon a small amount of jam onto the center of each whole cookie and top with a cut-out cookie to form a sandwich.
    12. Dust the cookies with icing sugar and enjoy!
