  • Preparation

    1. Thaw the lardons 1 hour before cooking. Remove the cod fillets from their packaging and place them in cold water for 30 minutes to thaw. Season with salt and pepper.
    2. In a small saucepan, melt 3 tablespoons of butter. Add the garlic and capers, cooking for 1 minute.
    3. Remove from heat, stir in the lemon juice, and set aside.
    4. Place the cod fillets in a baking dish and drizzle with the lemon-butter sauce.
    5. Bake for 12–15 minutes.
    6. Dans une poêle, chauffer les épinards sans matière grasse pour les cuire. Réserver à part.
    7. Cuire les lardons dans la même poêle à feu moyen pendant 5 minutes. Réserver.
    8. Dans la même poêle, faire fondre 2 cuillères à soupe de beurre, ajouter les courgettes encore surgelées et cuire 6-7 minutes supplémentaires. Ajouter les épinards et les lardons réservés.
    9. Top the vegetable mixture with the baked cod and drizzle with the remaining lemon-butter sauce. Garnish with fresh parsley if desired.
