    • 2 cod fillets (approximately 225 g)Cool & Simple
    • ½ package (150 g) of cooked carrots
    • 1 tsp (5 mL) La pincée No10 Spicy seasoning blendÉpicéeLa pincée
    • ½ medium cauliflower
    • ¼ cup (60 mL) 15% cooking cream
    • ¼ cup (60 mL) herbed goat cheese
    • 2 tsp (10 mL) olive or avocado oil
    • 2 tbsp (30 mL) finely chopped almonds
    • 1 tbsp (15 mL) maple syrup

  • Preparation

    1. Preheat the oven to 350°F (175°C) and position the rack in the centre. Line a baking sheet with parchment paper.
    2. Prepare the cauliflower purée: cut the cauliflower into florets and steam until very tender.
    3. In a blender, purée the cauliflower with the cooking cream and herbed goat cheese until smooth.
    4. Spread the cauliflower purée onto the prepared baking sheet. Place the cod fillets on top, then brush them with oil and sprinkle with the spice blend and chopped almonds.
    5. Add the cooked carrots to the baking sheet and drizzle them with maple syrup.
    6. Bake for 12 minutes, or until the cod is cooked through. Serve immediately while hot.Bon appétit!
