- 2 cod fillets (approximately 225 g)Cool & Simple
- ½ package (150 g) of cooked carrots
- 1 tsp (5 mL) La pincée No10 Spicy seasoning blendÉpicéeLa pincée
- ½ medium cauliflower
- ¼ cup (60 mL) 15% cooking cream
- ¼ cup (60 mL) herbed goat cheese
- 2 tsp (10 mL) olive or avocado oil
- 2 tbsp (30 mL) finely chopped almonds
- 1 tbsp (15 mL) maple syrup

Preparation
- Preheat the oven to 350°F (175°C) and position the rack in the centre. Line a baking sheet with parchment paper.
- Prepare the cauliflower purée: cut the cauliflower into florets and steam until very tender.
- In a blender, purée the cauliflower with the cooking cream and herbed goat cheese until smooth.
- Spread the cauliflower purée onto the prepared baking sheet. Place the cod fillets on top, then brush them with oil and sprinkle with the spice blend and chopped almonds.
- Add the cooked carrots to the baking sheet and drizzle them with maple syrup.
- Bake for 12 minutes, or until the cod is cooked through. Serve immediately while hot.Bon appétit!
