    • 1 pack of Cool&Simple falafels
    • 2 cups cooked farro, quinoa, or brown rice
    • ¼ cup tahini
    • ¼ cup lemon juice
    • 2 tbsp water
    • 1 minced garlic clove
    • 3 tbsp nutritional yeast
    • Salt and pepper, to taste
    • 1½ cups halved cherry tomatoes
    • 1 cup sliced cucumber half-moons
    • 1 tbsp chopped fresh mint
    • Juice of ½ lime
    • Drizzle of extra virgin olive oil
    • ¼ tsp garlic powder

  • Preparation

    1. Preheat oven to 430°F.
    2. Place falafels on a parchment-lined baking sheet and bake for 12 minutes.
    3. Cook grains according to package instructions.
    4. In a small bowl, mix tahini, lemon juice, water, garlic, nutritional yeast, salt, and pepper.
    5. In another bowl, combine cucumbers, tomatoes, mint, lime juice, olive oil, and garlic powder.
    6. Assemble bowls with grains, falafels, and salad.
    7. Drizzle with tahini sauce and enjoy!
