- 1 pack of Cool&Simple falafels
- 2 cups cooked farro, quinoa, or brown rice
- ¼ cup tahini
- ¼ cup lemon juice
- 2 tbsp water
- 1 minced garlic clove
- 3 tbsp nutritional yeast
- Salt and pepper, to taste
- 1½ cups halved cherry tomatoes
- 1 cup sliced cucumber half-moons
- 1 tbsp chopped fresh mint
- Juice of ½ lime
- Drizzle of extra virgin olive oil
- ¼ tsp garlic powder

Preparation
- Preheat oven to 430°F.
- Place falafels on a parchment-lined baking sheet and bake for 12 minutes.
- Cook grains according to package instructions.
- In a small bowl, mix tahini, lemon juice, water, garlic, nutritional yeast, salt, and pepper.
- In another bowl, combine cucumbers, tomatoes, mint, lime juice, olive oil, and garlic powder.
- Assemble bowls with grains, falafels, and salad.
- Drizzle with tahini sauce and enjoy!
